Greco Passito

In the Municipality of Bianco and partly in the Municipality of Casignana, in the province of Reggio Calabria, an enological gem is produced: Greco di Bianco passito wine. This area is characterized by white clayey and calcareous soils that give origin to structured and alcoholic wines with a strong character. Very few producers still use the traditional method consisting of drying the grapes on the so-called cannizze (wickerwork trellis). In the Municipality of Gerace, outside the area of Greco di Bianco DOC, there is a small production niche of Greco passito. In September, when in this part of Calabria it is still very hot, the bunches of Greco grapes are placed on wickerwork trellis, the so-called cannizze, where they are left to dry from 8 to 15 days: the color and intense perfume released by the grapes indicate the right maturation point. The return is low, since from a quintal of grapes it is possible to obtain an average of 30 liters of passito wine, which becomes great if left aging for 3 or 4 years. Ideal if you drink it when it is cold, but also at a room temperature with desserts and ice-creams.
